SELECT YOUR WINE
Choose a variety and quality of wine you’d like to make.
Having fun and getting the best goes hand in hand. We’ll help you match your current tastes with over 60 varieties and quality levels of wine. We’ll offer our best recommendations as we get to know your likes and dislikes, and you’ll discover our exclusive products sold only at Vintner’s Cellar are more than just a label on a kit.
ADD YOUR YEAST
Pitching the yeast is fun and gets your wine off to a great start.Once you've selected the variety you'd like to brew, you add the yeast to the wine juice to start the Primary Fermentation process.And then we take over - that's all you have to do until bottling time in about 6 weeks! We will call you in 5 to 6 weeks when it’s time to come in and bottle your wine.
FERMENTATION
How your wine is handled at each step adds to the quality of your wine. Here at the store, your wine will ferment for four weeks. The yeast works with the natural sugars in the juice to create alcohol and develop flavour.
RACKING
Racking is the process of transferring your wine to a carboy to finish fermenting. Seven days into fermentation, we siphon your wine into a glass carboy and remove the large scale sediments.
STABILIZING
Now it's time to stop fermentation. We siphon your wine to another glass carboy and add a stabilizing agent to completely stop any further fermentation.
FILTERING
We then filter your wine using a 10 pad filter machine, to remove any elements that would cloud your wine, resulting in a crystal clear wine that sparkles. The best wine is full bodied yet crystal clear. When you hold your glass up, you will see a great wine with exceptional clarity.
DE-GASSING
Degassing your wine properly is a very important step in wine making. Just prior to your bottling appointment (don’t worry, we will contact you!), we will remove as much of the suspended CO2 left over from fermentation as we can. This produces a wine you can drink immediately, but will still improve with aging.
The most common way of degassing wine is to agitate and stir the gas out of the wine but this can have a negative effect on the character and quality of your finished wine. Because we care about quality, we take the extra time to gently pull the gas from your wine using our unique vacuum process used only at Vintner's Cellar. This leaves your wine with its full, undisturbed richness.
And this is where you come back in!We’ll call you, to set up an appointment, when it’s time to come in and bottle your wine. Making an appointment means we don’t run the risk of having to try and bottle multiple batches at the same time.
BOTTLING
Bottling your wine is fun and easy. We make sure you’re comfortable with the process while having a few laughs along the way. You'll either bring your bottles with you, or purchase ours. Bottles are cleaned and sanitized using our state-of-the-art bottle washer and then we’ll help you to bottle, cork, label and shrink wrap your wine. – it is easy, fun and fast!
LABELLING
Presentation is a big part of the enjoyment of your wine, so we include customized labels and shrink caps in your winery fee. We help you select and customize your labels, so your wine reflects your personality and the overall presentation.
Now all that’s left is to take your wine home and do the hardest part - wait. If you’re patient and allow your wine to age for 3 to 6 months, you'll enjoy a smoother, more full bodied wine, rich in flavour and character, however, if you choose not to wait, we are still confident, when you open that first bottle it will be a highly enjoyable experience.
